Vegetable beef soup is a hearty and comforting dish that combines tender chunks of beef with a variety of vegetables in a flavorful broth. Here’s a basic recipe to get you started:
Ingredients:
- 1 pound (450g) beef stew meat, cut into small cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 cup (150g) diced tomatoes (fresh or canned)
- 4 cups (946ml) beef broth
- 2 cups (480ml) water
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups (300g) mixed vegetables (such as peas, corn, green beans)
- Chopped fresh parsley for garnish (optional)
Instructions:
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Cook until softened and fragrant, about 2-3 minutes.
- Add the carrots and celery to the pot and cook for another 5 minutes, stirring occasionally.
- Return the browned beef to the pot. Add the diced tomatoes, beef broth, water, dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 hour, or until the beef is tender.
- Once the beef is tender, add the mixed vegetables to the pot. Simmer for an additional 10-15 minutes, or until the vegetables are cooked through.
- Taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh parsley if desired.
