Southern potato salad

Southern potato salad is a classic dish that’s popular in the Southern United States. Here’s a basic recipe for making Southern-style potato salad:

Ingredients:

  • 2 pounds potatoes (Yukon Gold or red potatoes work well), peeled and cubed
  • 3 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup sweet pickle relish
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • Salt and pepper to taste
  • Paprika for garnish (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Place the cubed potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat, then reduce the heat to medium-low and simmer the potatoes for about 10-15 minutes, or until they are fork-tender but not mushy.
  2. While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the mayonnaise, mustard, apple cider vinegar, sweet pickle relish, chopped onion, and chopped celery. Season the dressing with salt and pepper to taste.
  3. Once the potatoes are cooked, drain them in a colander and let them cool for a few minutes.
  4. In a large mixing bowl, combine the cooked potatoes and chopped hard-boiled eggs. Pour the dressing over the potato mixture and gently toss until everything is evenly coated.
  5. Taste the potato salad and adjust the seasoning if necessary.
  6. Cover the bowl and refrigerate the potato salad for at least 1-2 hours before serving to allow the flavors to meld together.
  7. Before serving, garnish the potato salad with a sprinkle of paprika and chopped fresh parsley, if desired.
  8. Enjoy your delicious Southern-style potato salad as a side dish at your next barbecue or picnic!
