Ingredients:
- 12 graham cracker squares
- 1/2 cup chocolate chips or chunks
- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1 quart (4 cups) vanilla ice cream
- Mini marshmallows (for topping)
Instructions:
- Prepare Graham Cracker Base:
- In a microwave-safe bowl, melt the butter.
- Add chocolate chips or chunks to the melted butter and stir until melted.
- Stir in brown sugar and vanilla extract until well combined.
- Create Ice Cream Squares:
- Line a square baking pan with parchment paper, leaving some overhang for easy removal.
- Pour half of the melted chocolate mixture into the bottom of the pan.
- Freeze for 15-20 minutes or until set.
- Layer with Ice Cream:
- Soften the vanilla ice cream slightly and spread it over the set chocolate layer in the pan.
- Freeze for another 15-20 minutes until the ice cream is firm.
- Top with Graham Cracker and Freeze:
- Pour the remaining melted chocolate mixture over the ice cream layer.
- Place graham cracker squares on top, pressing down slightly.
- Freeze the entire pan for at least 4 hours or until completely set.
- Cut into Sandwiches:
- Once frozen, use the parchment paper overhang to lift the ice cream slab out of the pan.
- Cut into squares or rectangles to form individual ice cream sandwiches.
- Add Marshmallow Topping:
- Press mini marshmallows onto the sides of each ice cream sandwich for the s’mores effect.
- Serve and Enjoy:
- Place the S’mores Ice Cream Sandwiches in the freezer until ready to serve.
