S’mores Ice Cream Sandwiches

Ingredients:

  • 12 graham cracker squares
  • 1/2 cup chocolate chips or chunks
  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 quart (4 cups) vanilla ice cream
  • Mini marshmallows (for topping)

Instructions:

  1. Prepare Graham Cracker Base:
  • In a microwave-safe bowl, melt the butter.
  • Add chocolate chips or chunks to the melted butter and stir until melted.
  • Stir in brown sugar and vanilla extract until well combined.
  1. Create Ice Cream Squares:
  • Line a square baking pan with parchment paper, leaving some overhang for easy removal.
  • Pour half of the melted chocolate mixture into the bottom of the pan.
  • Freeze for 15-20 minutes or until set.
  1. Layer with Ice Cream:
  • Soften the vanilla ice cream slightly and spread it over the set chocolate layer in the pan.
  • Freeze for another 15-20 minutes until the ice cream is firm.
  1. Top with Graham Cracker and Freeze:
  • Pour the remaining melted chocolate mixture over the ice cream layer.
  • Place graham cracker squares on top, pressing down slightly.
  • Freeze the entire pan for at least 4 hours or until completely set.
  1. Cut into Sandwiches:
  • Once frozen, use the parchment paper overhang to lift the ice cream slab out of the pan.
  • Cut into squares or rectangles to form individual ice cream sandwiches.
  1. Add Marshmallow Topping:
  • Press mini marshmallows onto the sides of each ice cream sandwich for the s’mores effect.
  1. Serve and Enjoy:
  • Place the S’mores Ice Cream Sandwiches in the freezer until ready to serve.
