slow cooker Swiss steak

Here’s a simple and delicious slow cooker Swiss steak recipe:

Ingredients:

  • 2 pounds (about 900g) beef round steak, cut into serving-size pieces
  • Salt and pepper to taste
  • 1/4 cup (30g) all-purpose flour
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup (120ml) beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions:

  1. Prepare the Beef: Season the beef round steak pieces with salt and pepper, then dredge them in flour to coat evenly.
  2. Sear the Beef: Heat the vegetable oil in a skillet over medium-high heat. Once hot, add the beef pieces and brown them on both sides, working in batches if necessary. Transfer the browned beef to the slow cooker.
  3. Add Ingredients to Slow Cooker: Place the sliced onions and minced garlic on top of the beef in the slow cooker. Pour the diced tomatoes (with their juice) over the onions and beef. Add the beef broth, Worcestershire sauce, dried thyme, dried oregano, and bay leaf to the slow cooker.
  4. Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the beef is tender.
  5. Optional Thickening: If you prefer a thicker sauce, mix cornstarch and cold water in a small bowl until smooth. Stir this mixture into the slow cooker during the last 30 minutes of cooking. Let it cook until the sauce has thickened slightly.
  6. Serve: Once the beef is cooked to your desired tenderness and the sauce is thickened (if using), remove the bay leaf. Serve the Swiss steak over cooked rice, mashed potatoes, or noodles, spooning the flavorful tomato-onion sauce over the top.

Enjoy your comforting and hearty slow cooker Swiss steak!
