Ingredients:

  • 2 lbs (about 1 kg) Yukon Gold potatoes, peeled and thinly sliced
  • 1 small onion, finely chopped

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheese (such as sharp cheddar, Gruyere, or a combination)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.
  3. Sprinkle the flour over the onion and garlic mixture, stirring constantly, and cook for an additional 1-2 minutes to make a roux.
