Savory Scones

Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1 cup grated sharp cheddar cheese
  • 1/4 cup chopped fresh chives or green onions
  • 1/4 cup chopped fresh parsley
  • 1 cup buttermilk (plus extra for brushing)

Optional Add-ins:

  • Crumbled cooked bacon
  • Grated Parmesan cheese
  • Black pepper

Instructions:

  1. Preheat Oven:
  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  1. Mix Dry Ingredients:
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  1. Add Cold Butter:
  • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
  1. Add Cheese and Herbs:
  • Stir in the grated cheddar cheese, chopped chives or green onions, and chopped parsley. If you’re adding optional ingredients like bacon or Parmesan cheese, add them now.
  1. Combine with Buttermilk:
  • Make a well in the center of the mixture and pour in the buttermilk. Gently stir until just combined. Be careful not to overmix; the dough should be slightly sticky.
  1. Shape the Dough:
  • Turn the dough out onto a floured surface. Pat it into a round disc about 1 inch thick.
  1. Cut into Scones:
  • Use a floured biscuit cutter to cut out scones. Place the scones on the prepared baking sheet, leaving some space between each.
  1. Brush with Buttermilk:
  • Brush the tops of the scones with a little buttermilk for a golden finish.
  1. Bake:
  • Bake in the preheated oven for 12-15 minutes or until the scones are golden brown.
  1. Cool:
    • Allow the savory scones to cool on a wire rack for a few minutes before serving.

Serve these savory scones warm with a pat of butter or your favorite savory spread. They make a delightful addition to breakfast, brunch, or as a side with soups and salads. Enjoy!
