One-Pot Lasagna Soup

Ingredients:

  • 1 lb ground Italian sausage
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup water
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 1/2 cups broken lasagna noodles
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. In a large pot or Dutch oven, brown the ground Italian sausage over medium heat. Drain excess fat if needed.
  2. Add chopped onion to the pot and sauté until softened.
  3. Stir in minced garlic and cook for about 1 minute until fragrant.
  4. Pour in crushed tomatoes, diced tomatoes, beef or vegetable broth, and water. Stir to combine.
  5. Season with dried basil, dried oregano, salt, and black pepper. Bring the soup to a simmer.
  6. Break the lasagna noodles into smaller pieces and add them to the pot. Cook until the noodles are tender, stirring occasionally.
  7. In a bowl, mix together ricotta cheese, shredded mozzarella, and grated Parmesan.
  8. Once the noodles are cooked, ladle the soup into serving bowls.
  9. Top each bowl with a dollop of the ricotta mixture.
  10. Garnish with fresh basil or parsley if desired.
