no-bake blueberry cheesecake

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Blueberry Sauce:

  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice

For the Cheesecake Filling:

  • 16 ounces (450g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream

Instructions:

1. Prepare the Crust:

  • In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated with butter.
  • Press the mixture into the bottom of a 9-inch springform pan to form the crust. Use the back of a spoon or a flat-bottomed glass to compact it.

2. Make the Blueberry Sauce:

  • In a saucepan, combine the blueberries, sugar, water, and lemon juice. Cook over medium heat, stirring occasionally, until the blueberries burst and the mixture thickens (about 8-10 minutes).
  • Remove from heat and let it cool. Once cooled, you can either leave the blueberry sauce chunky or blend it for a smoother consistency.

3. Prepare the Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese until smooth.
  • Add the powdered sugar and vanilla extract, and continue to beat until well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.

4. Assemble the Cheesecake:

  • Pour half of the cheesecake filling over the crust in the springform pan.
  • Spoon half of the blueberry sauce over the cheesecake filling, swirling it with a knife or toothpick to create a marbled effect.
  • Repeat the layers with the remaining cheesecake filling and blueberry sauce.

5. Chill:

  • Refrigerate the no-bake blueberry cheesecake for at least 4-6 hours, or preferably overnight, to set.

6. Serve:

  • Before serving, you can optionally garnish the top with additional blueberry sauce or fresh blueberries.

This no-bake blueberry cheesecake is a delightful and refreshing dessert, perfect for summertime or whenever you want a hassle-free cheesecake experience. Enjoy!
