Here’s a simple recipe for Mama’s Casserole Pork Chops:
Ingredients:
- 4 pork chops
- 1 cup of rice
- 1 can of cream of mushroom soup
- 1/2 cup of chicken broth
- 1 small onion, diced
- 1 clove of garlic, minced
- Salt and pepper to taste
- 1 tablespoon of olive oil
- Optional: grated cheese for topping
Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Season the pork chops with salt and pepper, then brown them in the skillet for about 2-3 minutes on each side. Remove the pork chops from the skillet and set them aside.
- In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the rice to the skillet and stir it around for a minute to toast it slightly.
- In a separate bowl, mix together the cream of mushroom soup and chicken broth until well combined.
- In a casserole dish, spread the rice and onion mixture evenly on the bottom.
- Place the browned pork chops on top of the rice.
- Pour the soup mixture over the pork chops and rice, ensuring everything is well coated.
- Cover the casserole dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the pork chops are cooked through and the rice is tender.
- If desired, uncover the casserole during the last 10 minutes of baking and sprinkle grated cheese on top. Return to the oven until the cheese is melted and bubbly.
- Serve Mama’s Casserole Pork Chops hot, garnished with chopped parsley if desired. Enjoy!
