Mama’s Casserole Pork Chops

Here’s a simple recipe for Mama’s Casserole Pork Chops:

Ingredients:

  • 4 pork chops
  • 1 cup of rice
  • 1 can of cream of mushroom soup
  • 1/2 cup of chicken broth
  • 1 small onion, diced
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • Optional: grated cheese for topping

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Season the pork chops with salt and pepper, then brown them in the skillet for about 2-3 minutes on each side. Remove the pork chops from the skillet and set them aside.
  3. In the same skillet, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant.
  4. Add the rice to the skillet and stir it around for a minute to toast it slightly.
  5. In a separate bowl, mix together the cream of mushroom soup and chicken broth until well combined.
  6. In a casserole dish, spread the rice and onion mixture evenly on the bottom.
  7. Place the browned pork chops on top of the rice.
  8. Pour the soup mixture over the pork chops and rice, ensuring everything is well coated.
  9. Cover the casserole dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the pork chops are cooked through and the rice is tender.
  10. If desired, uncover the casserole during the last 10 minutes of baking and sprinkle grated cheese on top. Return to the oven until the cheese is melted and bubbly.
