Homemade cream horns

Cream horns, also known as Lady Locks or cream-filled pastry cones, are delightful pastries filled with sweet cream. Here’s a recipe for making homemade cream horns:

Ingredients:

For the pastry cones:

  • 1 sheet puff pastry (store-bought or homemade)
  • Granulated sugar for dusting

For the cream filling:

  • 1 cup heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Thaw the puff pastry according to the package instructions, if using frozen pastry.
  3. Roll out the puff pastry on a lightly floured surface into a rectangle about 1/8 inch thick.
  4. Using a sharp knife or pastry cutter, cut the puff pastry into strips about 1/2 to 3/4 inch wide and 6-8 inches long.
  5. Wrap each strip of puff pastry around a cream horn mold or cone-shaped mold, starting from the pointed end and overlapping slightly as you wrap. Leave some space at the top and bottom of the mold. Secure the end of the pastry strip by pressing gently.
  6. Place the pastry-wrapped molds on the prepared baking sheet, seam side down. Repeat with the remaining pastry strips.
  7. Lightly sprinkle granulated sugar over the pastry cones.
  8. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed up.
  9. Remove the pastry cones from the oven and allow them to cool slightly on the baking sheet. Once cool enough to handle, carefully slide the pastry cones off the molds and onto a wire rack to cool completely.
  10. While the pastry cones are cooling, prepare the cream filling. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  11. Fill a piping bag fitted with a small round tip with the whipped cream filling.
  12. Gently pipe the cream into each pastry cone until filled.
  13. Serve the cream horns immediately, or refrigerate them until ready to serve. Dust with powdered sugar before serving, if desired.
