hearty beef roast pot

Here’s a delicious hearty beef roast pot recipe that’s perfect for a comforting meal:

Ingredients:

  • 3-4 pounds (1.4-1.8 kg) beef chuck roast
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 cups (480 ml) beef broth
  • 1 cup (240 ml) red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1/4 cup (30 g) all-purpose flour (optional, for thickening gravy)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. Season the beef chuck roast generously with salt and pepper on all sides.
  3. Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Once hot, add the beef chuck roast and sear it on all sides until browned, about 3-4 minutes per side. Remove the roast from the pot and set aside.
  4. In the same pot, add the sliced onion and minced garlic. Cook, stirring occasionally, until the onions are softened and translucent, about 3-4 minutes.
  5. Add the carrots and potatoes to the pot, arranging them in an even layer.
  6. Return the seared beef roast to the pot, placing it on top of the vegetables.
  7. In a separate bowl, mix together the beef broth, red wine (if using), Worcestershire sauce, bay leaves, dried thyme, dried rosemary, and paprika. Pour this mixture over the beef roast and vegetables in the pot.
  8. Cover the pot with a lid and transfer it to the preheated oven. Allow the beef roast to cook in the oven for about 3-4 hours, or until the meat is tender and easily shreds with a fork.
  9. Once the beef roast is cooked, remove it from the pot and transfer it to a serving platter. Use a slotted spoon to remove the vegetables from the pot and arrange them around the beef roast.
  10. If desired, you can thicken the gravy: In a small bowl, mix the flour with a few tablespoons of cold water until smooth to make a slurry. Slowly pour the slurry into the pot with the cooking juices, whisking constantly. Cook for a few minutes until the gravy thickens.
  11. Serve the hearty beef roast pot with the thickened gravy spooned over the top. Garnish with chopped fresh parsley if desired.

Enjoy your delicious and comforting beef roast pot!
