Egg Foo Young

Egg Foo Young is a delicious Chinese-American dish made with a mixture of eggs, vegetables, and sometimes meat, all fried together into a savory pancake-like dish. Here’s a recipe for making Egg Foo Young:

Ingredients:

For the Egg Foo Young:

  • 6 large eggs
  • 1 cup bean sprouts
  • 1/2 cup chopped cooked shrimp, chicken, pork, or ham (optional)
  • 1/4 cup chopped green onions (scallions)
  • 1/4 cup chopped onion
  • 1/4 cup chopped mushrooms
  • 1/4 cup chopped celery
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooking oil for frying

For the Gravy (Optional):

  • 1 cup chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions:

Making the Egg Foo Young:

  1. In a large mixing bowl, beat the eggs. Add the bean sprouts, chopped shrimp or meat (if using), green onions, onion, mushrooms, celery, soy sauce, oyster sauce (if using), vegetable oil, salt, and pepper. Mix well to combine.
  2. Heat a non-stick skillet or griddle over medium heat. Add a small amount of cooking oil to coat the surface.
  3. Scoop about 1/2 cup of the egg mixture onto the skillet, spreading it out into a round pancake shape. Cook for 2-3 minutes, or until the bottom is golden brown.
  4. Carefully flip the Egg Foo Young with a spatula and cook for another 2-3 minutes on the other side, until golden brown and cooked through.
  5. Transfer the cooked Egg Foo Young to a plate and keep warm while you cook the remaining pancakes, adding more oil to the skillet as needed.

Making the Gravy (Optional):

  1. In a small saucepan, combine the chicken or vegetable broth, soy sauce, and oyster sauce. Bring to a simmer over medium heat.
  2. In a small bowl, mix the cornstarch with water to create a slurry. Slowly pour the slurry into the simmering broth mixture, stirring constantly.
  3. Continue to cook and stir until the gravy thickens, about 2-3 minutes. Remove from heat.

Serving:

  1. Serve the Egg Foo Young hot, topped with the optional gravy if desired.
  2. Egg Foo Young pairs well with steamed rice and stir-fried vegetables for a complete meal.
  3. Enjoy your homemade Egg Foo Young!
