  • Optional: cooked and seasoned ground meat, shredded cooked chicken, or chopped vegetables

Instructions:

  1. In a mixing bowl, combine the masa harina and salt. Gradually add the warm water, mixing until a soft dough forms. If the dough feels too dry, add a little more water; if it’s too sticky, add a bit more masa harina.
  2. Once the dough is formed, cover it with a damp cloth and let it rest for about 10-15 minutes.
  3. While the dough is resting, prepare your filling ingredients if you haven’t already done so.
  4. After resting, divide the dough into golf ball-sized portions. Using your hands, flatten each portion into a disc about 1/4 inch thick.
  5. Place a spoonful of refried beans and a sprinkle of cheese (plus any additional fillings you desire) in the center of each disc.
  6. Carefully fold the edges of the dough over the filling, pinching them together to seal and form a stuffed ball. Gently flatten the ball into a disc again, making sure the filling is evenly distributed and sealed inside.
  7. Heat a lightly greased skillet or griddle over medium heat. Once hot, place the pupusas on the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
