Ingredients:
For the dough:
- 2 cups masa harina (corn flour)
- 1 1/4 cups warm water
- 1/2 teaspoon salt
For the filling:
- 1 cup refried beans
- 1 cup shredded cheese (such as mozzarella or Monterey Jack)
- Optional: cooked and seasoned ground meat, shredded cooked chicken, or chopped vegetables
Instructions:
- In a mixing bowl, combine the masa harina and salt. Gradually add the warm water, mixing until a soft dough forms. If the dough feels too dry, add a little more water; if it’s too sticky, add a bit more masa harina.
- Once the dough is formed, cover it with a damp cloth and let it rest for about 10-15 minutes.
- While the dough is resting, prepare your filling ingredients if you haven’t already done so.
- After resting, divide the dough into golf ball-sized portions. Using your hands, flatten each portion into a disc about 1/4 inch thick.
- Place a spoonful of refried beans and a sprinkle of cheese (plus any additional fillings you desire) in the center of each disc.
