Crockpot Goulash

Crockpot Goulash Recipe:

Ingredients:

  • 2 lbs beef stew meat, cubed
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 2 teaspoons paprika
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 bell peppers, sliced
  • 2 cups cooked elbow macaroni or your preferred pasta

Instructions:

  1. In a large skillet, heat vegetable oil over medium-high heat. Add the cubed beef and brown on all sides. Transfer the browned beef to the crockpot.
  2. In the same skillet, sauté the chopped onion until translucent. Add minced garlic and cook for an additional 1-2 minutes.
  3. Add tomato paste to the skillet and cook, stirring, for about 2 minutes.
  4. Transfer the onion and tomato paste mixture to the crockpot.
  5. Pour diced tomatoes, tomato sauce, and beef broth into the crockpot. Stir in paprika, caraway seeds, dried thyme, salt, and pepper.
  6. Cover and cook on low for 7-8 hours or until the beef is tender.
  7. About 30 minutes before serving, add sliced bell peppers to the crockpot.
  8. Cook pasta according to package instructions.
