Ingredients:

For the pizzelle batter:

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

For the cream filling:

  • 1 cup heavy cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. In a mixing bowl, beat the eggs and granulated sugar together until light and fluffy.
  2. Gradually add the melted butter and vanilla extract to the egg mixture, and continue beating until well combined.
  3. Sift the flour, baking powder, and salt into the wet ingredients. Stir until you have a smooth batter. The batter should be thick and slightly runny.
  4. Heat your pizzelle iron according to the manufacturer’s instructions.
  5. Drop a tablespoon of batter onto the center of each pattern on the preheated pizzelle iron. Close the iron and cook the pizzelles for about 30-45 seconds, or until they are golden brown and crispy.
  6. Carefully remove the pizzelles from the iron and immediately shape them into tubes or cones while they are still warm. You can do this by rolling them around a small cylindrical object such as a wooden dowel or the handle of a utensil. Hold the shape until the pizzelle cools and holds its shape. Repeat with the remaining batter.
  7. Once all the pizzelles are shaped and cooled, prepare the cream filling. In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  8. Fill a piping bag fitted with a small round tip with the whipped cream filling.
  9. Gently pipe the cream into each pizzelle tube until filled. You can also spoon the cream filling into the pizzelles if you prefer.
  10. Serve the cream-filled pizzelles immediately, or refrigerate them until ready to serve. Dust with powdered sugar before serving, if desired.
