Cheesy asparagus casserole

Ingredients:

  • 1 lb (about 450g) fresh asparagus, trimmed and cut into bite-sized pieces
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional, for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. Bring a pot of water to a boil and blanch the asparagus for about 2-3 minutes. Then, drain and transfer the asparagus to an ice bath to stop the cooking process. Drain again.
  3. In a mixing bowl, combine the shredded cheddar cheese, grated Parmesan cheese, mayonnaise, minced garlic, Dijon mustard, salt, and pepper. Mix well until all ingredients are evenly combined.
  4. Add the blanched asparagus to the cheese mixture and toss until the asparagus is coated.
  5. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  6. If you like a crunchy topping, you can sprinkle breadcrumbs over the top.
  7. Bake in the preheated oven for about 20-25 minutes or until the casserole is hot and bubbly, and the top is golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.
