Ingredients:

  • 4 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken or vegetable broth
  • 4 cups chopped broccoli florets
  • 1 cup grated cheddar cheese
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste

Instructions:

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and minced garlic to the pot, and sauté until softened, about 5 minutes.
  3. Sprinkle the flour over the onions and garlic, and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  4. Gradually whisk in the chicken or vegetable broth, stirring constantly to avoid lumps.
