Blueberry biscuits

Blueberry biscuits are a delightful treat that combines the flakiness of biscuits with the sweetness of blueberries. Here’s a simple recipe for making them:

Ingredients:

  • 2 cups (240g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick or 113g) unsalted butter, cold and cut into small pieces
  • 1 cup (about 150g) fresh blueberries
  • 3/4 cup (180ml) cold buttermilk
  • 1 teaspoon vanilla extract
  • Additional flour for dusting
  • Optional: additional sugar for sprinkling on top

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  3. Add the cold, diced butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. Some larger pieces of butter are okay; they will help create flakiness in the biscuits.
  4. Gently fold in the fresh blueberries until evenly distributed throughout the flour mixture.
  5. Make a well in the center of the mixture. Pour in the cold buttermilk and vanilla extract. Stir with a wooden spoon or rubber spatula until just combined. Be careful not to overmix; the dough should be slightly shaggy.
  6. Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1 inch (2.5cm) thick.
  7. Using a sharp knife or a biscuit cutter, cut the dough into squares or rounds. Place the biscuits on the prepared baking sheet, leaving a little space between each one.
  8. Optional: If desired, sprinkle the tops of the biscuits with a little extra granulated sugar for a sweet crunch.
  9. Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top and cooked through.
  10. Remove the biscuits from the oven and let them cool slightly on the baking sheet before serving.

These blueberry biscuits are best enjoyed warm, with a pat of butter and perhaps a drizzle of honey. They make a delicious addition to breakfast or brunch, or serve them as a sweet treat any time of day!
